2 Eggs
1 Cup of Spinach
2 Mushrooms
1/4 Red Bell Pepper
1/4 Cup of Red Onions
1/2 Avocado
1 tsp of Coconut Oil

DIRECTIONS
1. Heat a pan on medium heat and add the coconut oil. Once the coconut oil is melted add all of the vegetables except for the spinach and cook for 3minutes.
2. Next add the eggs and spinach.
3. Once the omelette is complete add the sliced avocado on top.
4. Season with salt and pepper to your desire.
